Does hitting a persona count as a whiff?
You can gatling into things that you normally could not have (if you had whiffed) when you hit a persona.
For example, 5B can only be gatling'd to 2B on hit/block. But if you hit the persona with 5B, you can gatling to 2B.

With that being said, I would imagine hitting a persona is basically the same as hitting the character. Kinda like hitting an assist in MvC.

5B is jump cancellable on hit (on the character, not on the Persona), but not on block. Yu 5B however won't allow me to jump cancel it after I hit a Persona, but it still allow me to throw his projectile (Zio)
Then I use his 2B which allow Yu to jump cancel on hit/block and it seems like I can jump cancel it after I use 2B hitting the Persona.
I believe hitting the Persona counts as hitting a character on block.
You can hit a Persona on whiff, but if you hit the Persona alone, the other person can hit you in your recovery too even though your property is let's say +frame on hit. You're still vulnerable to the character if you didn't attack them.
Hitting a persona is like hitting a char on block...that's interesting...

I really like the idea of being able to hit the Persona, it's not the same thing as being happy birthday'd in Marvel, but it's still enough of a check to keep people honest.
Hopefully, I can get the timing down in the future, though I do find it strange that it counts as hitting a character on block, does the persona continue it's attack even while being hit?
